Charles & Charles Cabernet Blend is 68% Cabernet Sauvignon and 32% Syrah. Both varieties were spontaneously fermented; the Cabernet was fermented whole berry without stems, while the Syrah was fermented whole cluster. Once fermentation was complete, both wines stayed on their skins for an average of 27 days to increase extraction and complexity. This is bold and richly textured with black plum and cherry flavors. Despite this fruit, it remains restrained and focused with notes of smoke, herbs and gravel.
