The first distillery to open in Chicago since the mid-19th century, Koval has been making whiskey from organic Nepalese millet since 2008. Millet is a gluten-free grain from the Poaceae family. Aged in new Minnesotan oak casks, this version is extremely complex, mature, silky and remarkably balanced.
