Industry Standard is made from sugar beets, grown and processed into sugar in the United States, and then delivered by the ton to our distillery. Here we create a mash, or wash as we call it, where the sugar is mixed with water along with the trace vitamins and minerals that our yeast need for fermentation. Our yeast is grown right here in our on-site lab. It’s a strain originally selected from beet fields in France, which works beautifully with our unique fermentation process. Distilled from sugar beets on equipment we designed and built by hand right here in Brooklyn, NY, Industry Standard boasts a flavor profile as unique as the process we use to make it. The nose hints at subtle fruits, with layered complexity beneath. On tasting, light florals open up into a warm, smooth flavor and rich texture, and finish with delicious fruit notes, hints of vanilla, and a touch of spice.
